Nice photos Guy. 
- The wiring in the first photo looks nicely organized.  Perhaps it is for power distribution.  If so, you might want to consider a Buss Bar approach to this kind of wiring.
- It looks like your main support for you MIP is wood.  Working with wood panels offers a lot of flexibility and can be worked with easily.  You might want to consider adding gussets in some of the corners for greater stability and stiffness.  Fiberglass/epoxy gussets are easily made and do not require an drilling or nut and bolts.  On the other hand, bolting things together allows for dis-assembly if required.
- The Throttle Quadrant looks nice. How did you build this up?  Was it a kit?  What functions does it have?
- Nice profile on the Yoke.  Once you have this Yoke shape completed, you might consider dipping it in an epoxy resin.  Then when cured, you can paint it black for a nice finish.  What functions (switches) do you have on the Yoke?  How is it interfaced to the Flight Simulator software?
