What would you guys suggest for led dome lights that I can connect to the CPFlight Dimmer pot on the pedestal?  12v led 5w draw....I am thinking....  Will the pot handle a 12v input?

The pot can not handle any direct connection to LEDs. It will replace the pot on a dimmer card which you typically would place in the overhead.

These little guys are widely used (I have 2) in sim cockpit. they are bulletproof and cost nothing
Order a few. Good for any 12v led array
Just gut them, solder longer wires and install the pot on your ped panel.

Can I use the cpflight dimmer pot to control the dimmer boxes you have Jack? or will it be completly separate?

I have no idea, it is simpler to take out the pot from the Chinese dimmer, make its wiring longer, install that pot on your CP panel wherever it is and keep the dimmer boxes hidden somewhere.
my two dimmers are neatly installed behind the MIP
