Greetings
I have a mini computer running simplugins on 2 monitors.
The main computer will run the sim
before I get busy on the cnc machine would anybody know if I can Undock the gps500 within 2020 on the main computer and use it on one of the two screens running on the mini pc.

Hi I haven't tried it myself, but was told if you hold RIGHT ALT click on the display you can pop it out. 

Give it a shot.

The question is can I drag it of of the main pc running FS2020 onto the networked pc running 2 monitors showing gauges / radio's etc.

Nope,  Not unless you use another program like Project Magenta etc.

it could be doable if your mini PC can be shown as a second monitor. I've seen it done with iPads where it extends the main screen into the iPad. You would have to try to do something similar.

I used to use a program, I think it was called MaxiVista, that would allow you to extend your desktop to a networked computer. It worked ok with FS9, never tried it with FSX+.
I don't know if 2020 allows multi-monitor use yet?
