Just wondering, will real aircraft switches work in a low volt, low amp setting of a flight simulator?

Almost.
Higher current/voltage switches will use the arc when the switch is changed to keep the contacts clean. Over time using a high power switch in a low power application will develop oxidised contacts.

That said, you should be fine in this case.

For what you are using them for it is a non issue.. Use them....

Aero switches can handle zillions of cycles, which is far from true with regular  toggles or pushbuttons.
Also the feel is 100% different.
Some good stuff also on the market like Carling, Honeywell etc
Pricey though.

As the others have said, don't worry you'll be fine. My comment was aimed at your "switch is a switch" remark.
You wouldnt want to use a household wall switch in a low power application.
